Abstract

The purpose of the article was to analyze the impact that edible insects have and can have on human and animal nutrition and their effects on the human environment. The analysis was based on the scientific literature in this area. The paper presents the health, economic and social aspects of eating and rearing edible insects in Europe and safety, especially as the FAO reports that the world population will grow to 9 billion by 2050. The growing interest in edible insects as an alternative source of nutrients, ease of cultivation will ensure that consumers in Europe know another diet, known since the beginning of human history.
